All too often, we throw around “authentic cuisine” until the words lose all shape and colour, like a postcard left too long in the Italian sun. I had forgotten its true meaning—until I came to Ostuni a Mare. Here, it is not a slogan; it is a pulse. My mornings began in a sunlit pavilion, with a breakfast buffet that felt less like a meal and more like a sprawling, generous map of Puglia: sweet, blistered mozzarelline and cherry tomatoes, with bruschetta dripping with new oil, and burrata so fresh it wept onto the plate.
